Cultivated traditionally, our olive trees thrive on slopy grounds, naturally rich in minerals, which give our olive oil its authentic taste.

By cold-pressing our olives after every day of harvest, we are able to preserve its nutritional qualities; this process allows us to produce a very high quality oil, full or vitamins and anti-oxidants.

There are 80 different varities of olive trees in Tuscany. Each variety has its own characteristis (resistance to cold, droughts...) and they all give different oils with specific flavours: freshly-cut grass, young artichoke, basil, dried fruits, green tomato...

Our olive fields are mostly made up of five varieties: Moraiolo, Leccio, Frantoio, Pendolino and Maurino.

Our olive trees, whether young or centuries-old, are cultivated traditionally on rich slopy ground.

Our olive fields are irrigated with water from the well located in the centre of the Estate. To preserve water resources, we have implemented an electronically managed drip irrigation system.

The harvest of our olives is carried out at the peak of their ripeness, to ensure the best possible taste.

Harvested and sorted manually, our olives are taken to the press within the hours following their picking; this enables their freshness and quality to be preserved. 

Cold-pressed, our olives give the Villa Ambretta oil the incomparable flavour of fresh and authentic products, as indicated by our "Olio Extravergine di Oliva Toscano - IGP" label.

The oil press

Our oil is pressed in the cooperative oil press of the nearby village: the Frantoio Aldobrandeschi, in Campagnatico.

As a member of this cooperative press, we are able to follow every step of the production, from the pressing of the olives to the bottling of the oil.

The traditional know-how of the press and its artisanal methods enables us to offer a very high quality olive oil, which we are delighted to find on the tables of various prestigious restaurants in entire Europe
